Tired of the same old pizza? Try this unique and different way of making pizza!
Being Italian, I have always loved a good pizza especially with some anchovies. But this recipe takes a traditional Italian-style food and puts a completely different twist on it...with a unique and different way of making pizza.
This recipe uses smoked fish and I am always brining and smoking many different species of fish. Many people are not fond of eating bluefish, but they are absolutely delicious when smoked! 1 lb. pizza dough (store bought or home made)
¾ cup of cream cheese (nonfat if preferred)
1 tablespoon of fresh sliced dill
2 tablespoons of cornmeal
½ cup of flour
1 tablespoon of olive oil
3 ozs. of firm, smoked fish (Whiting or store bought salmon works well...BUT fluke, tuna, mako shark and blackfish are fine if you catch and smoke your own!)
1 tablespoon of capers
1 clove of garlic (optional)
Garnish: with fresh basil leaves when done
1) Place dough on counter and cover for 1½ hours prior to use.

On a lightly floured, hard, non-porous surface, press dough until its ¼ inch or so thick. Use enough flour so it doesn’t stick.

Pre-heat the oven to 425 degrees.

Rub both sides of dough with the olive oil. Place dough on stone or pizza pan with holes in it. Stick in oven when temp rises to 425 for 8-10 minutes or until dough starts to brown. Turn over if necessary. Once brown take out of oven for 5 minutes.

Lightly cover stone, pizza pan, or cookie tray with the cornmeal and put dough on top. Spread the cream cheese, dill, thinly sliced smoked fish, salt, pepper to taste. Sprinkle with garlic (optional)
6) Put back in heated oven for 6-8 minutes or until cream cheese starts to melt.
